Happy February! Start off the day with these delicious breakfast recipes.

February is the month of Hot Breakfasts! To celebrate this, we have provided some fun recipes below. You can make these recipes with slightly expired foods Enjoy!

Vanilla French Toast

  • 3 eggs
  • 2 tbsp sugar
  • Pinch of salt (optional)
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup half and half (you can substitute the half and half with slightly expired milk!)
  • 6-10 slices of bread, thickly cut(you can use expired bread for this as long as there is no mold)
  • Butter or vegetable oil (for grilling)
  • Butter and Maple Syrup (for serving, optional)

How to Make:

In a medium bowl, combine the eggs, sugar, salt, vanilla extract, and cinnamon. Whisk in the half and half.  Turn on the pan to Medium and butter it. Soak the bread in the bowl for 1-2 minutes.  Place the pieces of bread on the pan. Flip once the side of the bread is not soaking in liquid anymore. Do the same for the other side. Once finished, place on plate and serve with butter and maple syrup. Enjoy!

Basic Crepe

  • 2 eggs
  • 1 1/3 cups whole milk (you can use expired milk for this)
  • 3 tbsp sugar
  • 1 1/3 cup flour
  • 4 tbsp unsalted butter, melted
  • 1/2 tsp cinnamon
  • Strawberries, whipped cream, and chocolate sauce.

How to Make:

Blend sugar, eggs, milk, cinnamon and vanilla in a blender till smooth and frothy. Combine the flour and salt. Chill for at least 45 minutes. Heat a medium nonstick pan over medium-high, and butter. Ladle the batter onto the pan and swirl to evenly coat the bottom of the pan. Cook crepe until bubble form on surface and edges are golden. This should take about 2-3 minutes. Carefully flip the crepe until a few brown spots appear, then transfer to a plate. Serve warm with strawberries, whipped cream, and chocolate sauce.

What you’ll Need: 

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 tablespoon plus 1 teaspoon vanilla extract
  • 2 large eggs, separated, plus 2 additional egg whites
  • 1 stick (8 tablespoons) salted butter, melted, plus softened butter, for serving
  • Warm syrup, for serving

How to Make: 

Preheat the waffle iron to the regular setting.

Sift together the flour, sugar, baking powder and salt in a bowl. In a separate bowl, whisk together the milk, vanilla and 2 egg yolks. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.

In a separate bowl using a whisk (or a mixer), beat the 4 egg whites until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.

Scoop the batter into your waffle iron in batches and cook according to its directions (lean toward the waffles being a little deep golden and crisp!). Serve immediately with softened butter and warm syrup.
